What I Eat In A Week


This week was pretty cool because my partner started his new job, which led to me wanting to celebrate that by making him a cake to come home to at the end of his first day. I then seemed to be experiencing a strange phenomenon where I kept coming across gorgeous recipes that I really wanted to make, all at once. I got to around Wednesday, and realised that it would be really cool to document all the amazing meals that we ate this week, so that's what this post is going to be. This blog post wasn't planned, so I don't have photos for everything as I didn't know I was going to be writing it I decided to around mid-week, but I will link all of the recipes for sure!


Monday


So. Let's start with that Coconut Loaf Cake. I absolutely adored this cake, and I think it might become my favourite cake. In terms of baking it, I love it because it's so simple - so much so that I could make it in the hour he took to get home, and if you like baking, it's the kind of recipe where you'll already have all of the ingredients in the house like we did. In terms of eating it, it's so sweet, yet light and the toasted coconut on the top really give it an extra bit of delightful crunchy texture. It's just an all-round favourite for me.

As always, it's a Jane's Patisserie Recipe. It's actually from 2015, and the only reason I came across it is because Fabulous Hannah, or - 'FabHan' on Youtube made it in one of her recent vlogs, so massively grateful to her for that. One thing I do want to say about this cake is that this was my 2nd time making water/glace icing, and I was way better at it this time. I made vanilla sprinkle cake slices a week ago, and the icing was SO runny that I had to scrap it and remake it. This time, I didn't have that experience at all - I just knew, so if it is your first time making water icing, just be careful. It's a balance for sure.


I then decided to treat Stephen to homemade Pho, (Vietnamese Noodle Soup). I've been craving it the past few times that we've had our monthly takeaway, and it's just not been available anywhere, so I decided to make it myself. I think it was 'Emma's Rectangle' on Youtube who made homemade Pho in one of her latest vlogs, but she hadn't linked a recipe, so I found this one just from a quick Google search. I don't know why, but I was absolutely terrified that making this would be insanely complicated, but it really wasn't! The main, (hilarious) problem that I had with this is that because I wanted to make a lot of soup, I used our huge stock pot, and I have to tip-toe in order to see INTO the pot because I'm a teacup human. That was honestly the only problem, it's really a lot simpler than I thought and it was ABSOLUTELY DELICIOUS. Please make this.



Tuesday


So I basically woke up on Potato-Tok, (Potato Tik Tok), on Tuesday morning and saw the most gorgeous double-baked potatoes recipe, and I had to get out of bed and make them for myself for lunch, so that's what I did. It's this video, and that's basically all the information you need. Watch it, make them, and thank me later. I also made these again on Friday night for dinner, because obviously Stephen was at work during lunchtime on Tuesday and I really wanted to make them for him, too. They're honestly perfect for any meal of the day, but the only warning I'll put on them is they do take roughly 90 minutes to make in total, because I baked them for an hour first, before scooping out the middle, mashing it up with the ingredients I wanted, (which were: spring onions, sour cream, broccoli, red pesto, salt, pepper), and then topped it with grated cheese and parsley. Incredible!

Tuesday night was Stephen's dinner night, and he made Spicy Prawn Linguine. This was a spur-of-the-moment kind of dish, that he found the recipe for on the way home from work after I reminded him that we had prawns to finish. As much as we love our prawn soba recipe, we can't have that EVERY time that we have prawns in the house, and this one is also nice and simple (if a little slower)! It's not often that Stephen uses a recipe and follows it properly, but he finished it, beaming that he now has a new recipe that isn't just stir fry to torture me with ginger! This is the one that I don't have a photo of, but just trust me, it was divine.


Wednesday


This one was a kind of joint dinner night, which was very cool! We decided to make a lasagne together as it's something that neither of us had made before. Stephen even went to the length of buying a brand new Pyrex for it to be made in. We've all had lasagne before so I don't need to go too much into the details for this one, (the recipe is here, if you want it!), but we also made homemade garlic bread to go along with it, and it was a perfect mid-week dinner. We also added a Schwartz Creamy Parsley Sauce packet into our roux, (because I bought it months ago thinking it would eventually come in handy somehow, and it really did!), just to make the white sauce layers a little more interesting. Such a classic, and we'll definitely be making it again.


Thursday


I knew I was going to be making the twice-baked veggie baked potatoes for dinner on Friday (because I don't eat meat on Fridays during Lent), so I was kind of at a loss for what I wanted to make on this night, but Stephen suggested a roast dinner, which is basically magic to my ears, so that's what I ended up making! I kind of felt like we hadn't had a lot of vegetables for a few days, so I threw in carrots, broccoli, baby sweetcorn, (my FAVE), tomatoes and garden peas on the side, and it was all so gorgeous. I know that a roast is fairly standard but if you're curious as to how I make this, I basically put the potatoes into the oven for 20 minutes, flip them, add the tomatoes, and the chicken, and bake for another 20 minutes. Meanwhile, I boil all of the veggies except the garden peas, as I put them in during the last 5 minutes on the timer, at which point I also make the gravy, and ta-da! A beautiful Thursday roast dinner.
