Mum's Macaroni Casserole

Since I was a very small human, (even smaller than I am now), I have loved pasta, and cheese. One of my favourite recipes was one that my Mum created herself, and I adored it because it included both pasta and cheese.

About 4 weeks ago, I really started to miss my Mum and began craving this particular childhood favourite of mine. I asked her to send me the recipe so that I could recreate it. It turned out perfectly and she gave me permission to share it, so here it is!

It's a very simple recipe, but it's absolutely delicious in my opinion.

What you'll need:

Macaroni

Cheese (will be grated so you can buy already grated cheese if you prefer)

Milk

Parsley flakes

One small onion, cut into rings

One egg

Pinch of salt

Optional as they are not featured in Mum's original recipe, but I added:

Mushrooms

Spinach

Preparation:

Grate quite a large portion of cheese

Slice the onion - try to keep the rings whole and together as pictured here

Method:

Boil the macaroni (add a pinch of salt to help it boil faster!)

Fry the mushrooms if using

Combine the cooked macaroni with the grated cheese and parsley flakes - I like to make it super cheesy (do save some cheese, though!)

Add the mushrooms and spinach into the cooked pasta as you're mixing in the cheese and parsley

Slightly butter a casserole dish and add layers of the cooked macaroni mixture

Sprinkle grated cheese on top of each layer

Break the egg and combine it with a dash of milk. Whisk well and add a pinch of salt. This will be the egg wash which will remove the bitter taste from the onions.

When you have filled your casserole dish, dip the onions in the egg wash and place them on top of the pasta.

Spoon the remaining egg wash over the onions and cover them with more cheese. This will make them gorgeously golden.

Cooking:

Pop it into the preheated oven on 180° for 30 minutes until the onions are golden brown, and the egg is no longer runny.
