Another recipe post, because food is good for the soul.
A few weeks ago when my partner worked late for the first time in MONTHS, I had free reign of the kitchen, and decided to try out an entirely new recipe. It turned out to be absolutely delicious, and even though the name of it sounds super fancy, I found it quite simple to make.
Salmon en Croûte with Pan Fried Potatoes

I honestly don't use puff pastry enough, and I really want to find more recipes which include it. The preparation for this meal is really just about encasing the salmon fillet into the pastry, making a herb and lemon butter seasoning for the top, and putting it in the oven for 25-30 minutes. So simple, but it's one of my new favourites.
I served mine with pan fried potatoes, which I recently learnt how to do. I was always under the impression that potatoes take forever to cook, but these are so easy that I love adding them as a side to lots of different meals, now.
To make them, I cut four medium potatoes into slices/coins, and fried them on a high heat, with salt, pepper, and a small amount of butter for 5 minutes until they're golden. I then flipped them and repeated this step on the other side for a further 5 minutes. For the last 2 minutes of cooking, I added garlic granules and stirred this around so that they were all nice and coated. They're so fast to make, and I love how crispy some of them get!
2. Spinach and Brie Croissants
We recently made these as a lovely Saturday breakfast, and they are incredible. We found them in our '101 Quick Fix Dishes' recipe book by Olive Magazine.
You will need:
100g spinach
butter
1/2 garlic clove, crushed
2 croissants, slit open lengthways
6 thick slices of brie
The method is so incredibly simple - cook the spinach with a little butter and the garlic, until it has wilted. Lightly toast the croissants on the side that is cutaneous, and then pile on the spinach and brie. Grill them until all of the cheese is melted and then re-assemble the croissants.
Ta-da! One of the best hot weekend breakfasts, and so easy. They honestly take about 20 minutes, but they start off the weekend (or any morning that you have the time!) so perfectly.
